The sweet potato pairs nicely with the tangy cottage cheese, bacon and chives. This potato is one of the quickest lunches to prepare. The cottage cheese gives it lots of protein and the bacon and chives add a nice dash of flavor. Simply wash your potato and when lunch rolls around pop it into the microwave and cover with the toppings. Don't have a microwave? Heat the potato at home in the morning and place in your pre-warmed thermos.
