Preparation

Wash and dry your unbaked potato. Pack in your lunch. Pack frozen broccoli pieces and garbanzo beans in a microwave safe container. Pack soy cheese (if using) in a separate small container. When it is time for lunch, microwave your potato, then microwave the broccoli and beans. Top potato with warm broccoli and beans and cover with shredded cheese or salsa if you desire. Enjoy!
