This salad is inspired by a trip to Panera bread. Filled with fruit, nuts and veggies, it is a refreshing salad on a warm day loved by kids and adults alike. It is a great way to get a lot of fruits and vegetables into your body in one quick meal. Virtually all the fat in this dish comes from heart healthy fat in pecans that could help to lower cholesterol and ward off heart disease.

Wash and dry lettuce and place in any of the portable salad chiller containers available. Add the pecans and dried cherries to the lettuce. In a separate container, combine the fruit and chicken. Pack the dressing in a dressing container. Combine all ingredients when you are ready to enjoy a delicious lunch. Serve with crusty bread to complete the meal. *lower the sodium by using home cooked chicken pieces instead of pre-cooked chicken.
