This salad is so fantastic you'll feel like you are enjoying a meal at a local restaurant. But, the beauty of it is that it contains one quarter of the calories and 1/6 of the fat of the restaurant version. Use any of the portable salad containers available to make it easy to bring to work or school. Add more fiber and veggies by tossing in tomatoes or adding more carrots and celery.

Wash and dry lettuce. Slice the chicken tenders and toss in the wing sauce. Microwave for 2-3 minutes, or until heated. Using a peeler, shred the carrot and celery. Combine carrot, celery and lettuce in a portable salad container. Place dressing in a portable salad container. Toss the chicken well, and place in a separate container. When you are ready to eat, combine the chicken with the veggies and dressing and enjoy! *Our favorite way to serve carrots and celery on a salad is to peel the entire veggie. This results in thin strips enjoyed by even the most finicky vegetable eater. **Lower the fat even more, and keep the cost and sodium down by simply cooking chicken breasts and tossing them in the wing sauce.
