Inspired by the classic meatball sub, this sandwich is perfectly portable. Instead of a classic cake style, we made the crab mixture into meatball sized balls and baked them to keep them healthier. The result, a meatball sub made with round crab cakes for a little change of pace. *If you have access to a microwave, pack crab meatballs chilled in a microwave safe container and heat when it is time for lunch.
Ingredients
1 fl oz Skim Milk
2 slice Whole wheat bread
1 medium (approx 2-3/4" long, 2-1/2 dia.) Red pepper, finely minced
1 medium (2-1/2" dia) Onion, finely diced
1 teaspoon Old Bay Seasoning
1 large Egg
3 tsp Baking powder
1 tbsp Parsley
1 tbsp Worcestershire sauce
1 tbsp Light mayonnaise
16 ounces Canned Crab (Boss Brand)
Preparation
Saute onions and peppers with small amount of olive oil, or water until soft. Soak the bread in milk and mash up until it is broken into small bits. Add the rest of the ingredients, including the onions and peppers. Combine well. Refrigerate one hour. Remove from fridge and shape into balls. Place on a lightly greased baking sheet and bake for 20-25 minutes or until crisp and golden brown.
To prepare sandwich for lunch, place 3 warmed pieces into a pre-warmed thermos. Serve with a roll of your choice. *Calorie information is for only the crab cakes. Choose a roll high in fiber and low in calories. Add lettuce or shredded carrots and a spread to complete the sandwich.
