It doesn't get any easier or better than a chicken and cheese quesadilla. Use a whole wheat tortilla, lean chicken and reduced fat cheese and you have a healthy main dish.

Preparation
Cut tortilla in half (or you could use 2 of the fajita sized tortillas). Place it in a frying pan, top with the shredded cheese and chicken and finally the other half of the tortilla. Heat until warmed through, flipping once during heating time. Slice into 4 or 6 pieces and place in a thermos to keep warm, or in a non-insulated container to serve chilled. Perfect dipped in salsa and served with corn and carrot sticks for sides.
