We adapted these from Martha Stewart's Food magazine. Our version is different with its slightly sweet frosting and mini chocolate chip "seeds" in the center. These are a favorite with the younger set, as they love to count the seeds and compare with their friends. If you have a peanut butter allergy, try strawberry cream cheese frosting by adding pureed strawberries, or use Sun butter as an alternative.

Preparation

Slice the apples in half, horizontally to show the "star" in the center of the apple. Using a melon baller, remove the seeds. Also, remove the stem on the other side. Put 3-7 mini chocolate chip "seeds" in each apple.
Mix the softened cream cheese, peanut butter, and confectioner's sugar until smooth. Place in a pastry bag with a star tip and pipe small stars or swirls onto the apple, making sure to seal in the seeds really well. Place in cupcake liners.
These are perfect for a classroom snack and the kids get really excited about "cupcakes" on a normal day.
