A Coupon-Clipping Story: You saved $4.30 today

So, here’s the scenario …

  1. Spend an hour working your way through a LONG grocery list
  2. Wait in line at the checkout with a fistful of coupons, ready to save, save, save!
  3. Finish checking out, and see at the bottom of your receipt … You saved $4.30 today

What?? Just $4.30? Has this ever happened to you? It hardly seems worth it!

This was my typical experience with coupons. After enough hassle-filled trips resulting in paltry savings, I justified eschewing coupons with “we buy mostly fresh produce and there are no coupons for that,” or “coupons will make me buy things I don’t really want or need.” Deep down, however, I knew that there was a way to make them work. My friend Kristin saves A LOT of money using coupons, so I asked her if I could interview her! She shared some of her great techniques with me. I am SO excited, in turn, to share them with all of you!

Preparing a Rainbow

Her major in American Studies with an emphasis in race, ethnicity, and health in America has led her down the path of becoming a teen health educator. She is currently a HealthCorps Coordinator at a New York City school.

Every week during my after gardening/cooking club my students have been preparing healthy, delicious, and fresh recipes. My goal during this time is to have my students prepare something that is easy and colorful so that they understand the value of eating fruits and vegetables from all the colors of the rainbow. Also, while we are preparing the different recipes, it’s a perfect time for me to explain concepts such as nutrients, vitamins, minerals, and antioxidants. Read more…

Getting Calcium from Non-Dairy Sources

If you’ve read some of our recent posts, you know that our family’s eating habits have changed since we read The China Study. One such change is an almost complete elimination of dairy foods. Our son is ecstatic about this change: he isn’t a fan of cheese, is okay with skim milk, and doesn’t care for yogurt or string cheese. He’s thrilled!  We have adjusted well too, but admit to being a bit worried about our calcium intake. We’re all drinking calcium-fortified orange juice in the morning, and my husband and I take a calcium supplement. Several of our friends also read the book and have changed their dietary habits. As you might imagine, one of our conversations has been about making sure we’re getting calcium in our daily meals. Read more…

Mochi: A Perfect After School Snack

Shortly before my daughter turned 2, I decided to leave my teaching job and be a stay-at-home mom. Our family moved into our new home right around that time, and I found myself looking to connect with other local moms. Luckily, my mother-in-law taught second grade in our local school district and introduced me to a few mothers she knew. In short order, Elizabeth and I were part of a weekly playgroup. The toddlers played with blocks, books and push toys and the moms enjoyed a chance to catch up with adult conversation. Read more…

Delicious Vegan Carrot Muffins

Recently, our family read The China Study and Prevent and Reverse Heart Disease. The result: some changes to our diet. More vegan foods, with less meat, dairy and eggs. Experimenting with baked goods is now one of our new passions! After trying standard egg replacer and finding that the muffins didn’t rise as nicely as we’d like, we started to experiment with ground flax meal. We’ve heard that flax seeds could be an egg replacer in some things, and thought “why not try!”

We had one round of less-than-stellar results, made a few adjustments, and our second batch of muffins was fantastic! The flaxseeds add a nice hearty taste and added fiber.

To make these delicious vegan carrot muffins, the only special equipment you’ll need is a food processor (or a grater, but then you’ll also need some patience for grating the carrots!) They are a perfect lunch box treat or portable breakfast.

Fighting Obesity: On the Front Lines

I can’t help but twist my face in disgust at the quality (or lack thereof) of the foods that my students have access to every day in the school cafeteria. School should be the place where students have access to healthy choices that will provide them with energy and proper nutrition that they need to complete their day. As you can tell by the picture, options like fried mozzarella cheese sticks and french fries are offered as options for the students on a regular basis. Read more…

Lunch Gear Review: Warm & Tote

A few months ago, one of our readers asked us if we’d heard of Warm & Tote. We hadn’t, and promptly checked out their site! They offered to send us their classic Lunch &  Go to review. We have several Thermos products, ranging from the low-priced grocery store options to higher-end options. For our review, we compared the Warm & Tote against these standbys. We found that we preferred the flexibility of the Warm & Tote to our Thermos for some things, yet enjoyed our tried and true Thermos for others. Read more…

Rudolph at Schoellkopf: A Study in Gingerbread

Keeping with our annual holiday gingerbread tradition, we embarked on a project unlike anything we’d done before: a holiday scene fashioned after a storied college football stadium minutes from our home: Cornell University’s Schoellkopf Field! We hosted our church youth group and their leaders as they built the entire structure, from start to finish. Over the course of the afternoon, we supervised them as they

  • made gingerbread dough
  • rolled it out onto cookie sheets
  • used tagboard templates to cut out the pieces they’d need
  • assembled the structure using royal icing and steady hands
  • affixed all of the seats (made from sticks of gum they cut in half!)
  • affixed all of the fans to the stands
  • modeled all of the “actors”, including Santa’s sleigh, the reindeer, trees, a snowman and presents
  • flattened many pieces of licorice candy to make custom roof tiles (!)

To Dye or Not to Dye …

Consumption of food dyes has increased five-fold since 1955, thanks in part to the proliferation of brightly colored breakfast cereals, fruit drinks, and candies pitched to children. Use of artificial food dyes was phased out in Britain as of December 2009, and in the European Union, all companies are required to put a label on any food item containing artificial dye. The Center for Science in the Public Interest (CSPI) predicts that the label requirement (the food label states: “may have an adverse effect on activity and attention in children”), will be the death knell for all food dyes in Europe.1 Read more…

November Lunches on $1.77 a Day

One of the things we try to do with each lunch we make is to be aware of what’s in our pantry, and how what we’ve bought can be incorporated into multiple lunches. As an experiment, we got a bit more formal this month, in terms of organization and finances. We asked ourselves, “How does sending lunch from home compare with the cost of school lunch?” and “When we plan out lunches by the week or month, what economies of scale do we see?”
