Now that we’re back from vacation and settling into our Fall routine, we have to take a few minutes and share with your our new favorite go-to lunch – we call it our take on the “whole bowl” (inspired by an eatery of the same name), and it’s refreshingly simple and delicious.

You can mix up your own ingredients (see our recipe page), but the basics are:
- Brown rice
- Black beans
- Avocado
- Shredded cheese
- Banana peppers
- Jalapeño slices
- Cilantro
- Salsa (stands in for “secret sauce”)
We recently ate this kind of bowl in Portland, OR at The Whole Bowl (their retail location AND at Portland’s famous food carts), and similar delectable dinners at Cafe Yumm! in Bend, OR and later in Portland, OR. We just polished off today’s homemade bowl (pictured), and it’s just as good, if not better, than what you can get while you’re out and about. So, want to shake up lunch at work or school? Pack it, heat it, and enjoy!
Oh, and here’s the ultimate testimonial: our 8-year old thought about having themed lunches for school … and one of the days was reserved as a “Whole Bowl” day. We’ll see how that goes!
